Brown rice, coconut and mango porridge
Ingredients:
150 g brown rice
400 ml coconut milk
1 cinnamon stick
3 ground cardamom pods
1/2 tbsp vanilla powder
Juice of one lime and grated zest of half a lime
Toppings:
chopped mango
2 tablespoons black sesame
1 tablespoon grated coconut.
Preparation:
Boil the rice and drain; mix with the coconut milk, cinnamon, cardamom and vanilla in a saucepan; cook for 10-15 minutes over low heat and stir; remove the cinnamon and stir in the lemon juice and zest. Serve and add the toppings.
